Eiffel Tower’s Creme Brulee French Toast
In the United States, French Toast has become a recognized dish featured on almost every Brunch menu. The French call it Pain Perdu or “lost bread”, because they often use the bread leftover at the end of the day, which is perfect for soaking up a batter that usually consists of egg, milk, cinnamon and vanilla. You can use a variety of breads to make your own French Toast, from sourdough bread to cranberry walnut bread. The possibilities are truly endless!
At Eiffel Tower Restaurant, we combine two of our favorite delights to create our unique Crème Brulée French Toast for our Saturday and Sunday brunch. Our bread of choice is brioche, a classic French bread. We remove the crust and cut a thick slice which we immerse in a bowl of Crème Brulée custard. We let the brioche soak up as much custard as possible, and then it is coated in sugar and baked for 30 minutes, long enough for the custard to set. When the French Toast comes out of the oven, the center is filled with vanilla pastry cream. The final touch is to sprinkle the top with sugar and torch the sugar, creating the classic crust that Crème Brulée is known for. We garnish with fresh berries and whipped cream, finishing the dish with a side of our cardamom orange maple syrup.
