Aperol Spritz is not new to the cocktail world, but it has certainly become the drink of the summer this year, featured on menus across the country. Aperol was originally produced in 1919 by the Barbieri brothers in Padua, Italy, but did not become popular until after World War II, when the first Aperol Spritz recipe was created. The simple combination of Aperol, white wine, and club soda was a hit, and remained popular throughout the 1950’s.
Today, Aperol is once again being appreciated for its bright orange color and aroma, complex herbal notes, and slightly bitter finish. At Eiffel Tower Restaurant, we celebrate this unique aperitif with our Aperol Champagne de Paris. One and a quarter ounce of Aperol is topped with 1 ounce of Sauvignon Blanc, 2 ounces of Champagne, and a splash of club soda. We finish with an orange twist and voila! – Summer sun in a glass.
