Rosemary Cucumber Gimlet
Spring is here once again at Eiffel Tower Restaurant, and not only are our Chefs enjoying the culinary inspiration that this season provides, but also our mixologists. Spring lends itself to cocktails that are a little lighter, incorporating fresh ingredients, such as herbs, fruits, and vegetables from the garden, and we think gin is the perfect spirit to bring these Spring ingredients to life.
Gin has long been a classic choice for making great cocktails. Juniper berry, which is gin’s primary defining characteristic, has notes of pine, and can be distinctly herbaceous and floral. With these flavors in mind, we have created a new Spring cocktail – our Rosemary Cucumber Gimlet.
A Gimlet is typically gin and lime juice, but of course at Eiffel Tower Restaurant, we elevate the Gimlet to another level. We begin by muddling 1/2 an ounce of simple syrup with five cucumber slices and one sprig of fresh rosemary. Then we add 2 ounces of Cucumber Gin, 3/4 ounce lime juice and ice. These ingredients are shaken and then strained over fresh ice in a Collins glass, and garnished with a sprig of fresh rosemary. Enjoy this cocktail during the month of April in our beautiful bar or dining room while overlooking the Las Vegas Strip and the Bellagio fountains. Santé! (Cheers!)
